Cekodok Pisang - Fried Banana Fritters

Cekodok is a dish that I came across very recently when scrolling at my Insta story. I decided to make it after requesting the recipe from a friend of mine.


Cekodok is a Malaysian snack commonly eaten in during tea time or when guests are over. Cekodok could be described as a relative to Pisang Goreng - which is quite similar to cekodok except it is sliced then fried with the batter. Cekodok is made with mashed up bananas and flour as the main ingredients.


The recipe is based off my friend with some tweaks to the recipe. As per Asian cooking, few of the measurements are adjusted to suit personal preferences and tastes.



 

Cekodok Recipe (makes approx. 20 pieces)

Takes approx 30-40 mins


Ingredients needed:


4 ripened bananas, mashed

2 cups/400g of flour, sifted

1 tsp of baking soda

1 egg

1 tsp of sugar (adjusted for sweetness)

a pinch of salt

Oil, enough to cover the pan


Method:


1) Firstly, mash the bananas in a bowl to a mushy consistency. Make sure that it is totally mashed without any large pieces of banana left.


2) Into another bowl, take the flour and baking soda and sift it to prevent any large clumps when mixing later



3) Add the salt and sugar into the same bowl and mix the dry ingredients


4) Add the egg into the bowl with the bananas and mix it in, The egg acts as a binding force for the batter.




5) Mix the flour and bananas together till it is totally combined in together and there is no clumps.



6) In a frying pan/ wok, heat up the oil


7) Make sure the oil is completely heated up by placing a wooden utensil into the wok/ pan. The oil is heated up when there is bubbling on the wooden utensil.


8) When the oil is bubbling, add the batter by small batches slowly into the oil and immediately turn the fire to low/medium. This is because the bananas cook really quickly and may burn easily if it is not watched every so often. Fill the pan by batches to prevent it from overcrowding.


9) Flip the cekodok every 15 -20 seconds (depending on the size) to prevent it from burning. Once the cekodok turns golden brown on every side,it is done. Place it onto a kitchen paper to drain the oil.



10) After completing, the cekodok is now able to be eaten and enjoyed by everyone. Enjoy!
